Michael Westenbrink - General Manager
Michael joins from Le Monde Restaurants in Cardiff where he spent three years as multi site general manager. Prior to joining Le Monde in 2008, Michael worked as general manager at Left Bank Bar and Restaurant in Hereford where he joined the team in 2006.
Studying hotel management in the Netherlands, Michael started his career as a restaurant manager in 1995 in Holland before working in Italy and moving to the UK in 2005.
Michael is responsible for overseeing Brigade’s bar & bistro, cook school and dedicated event, meeting and private dining spaces.
Simon Boyle - Chef Founder
Passionate about cooking from an early age, Simon’s worked within world class organisations including The Savoy, The Chewton Glen and Mosimann's.
Simon started his own private dining, events and corporate cook school business in 2000, later developing into a social enterprise that is now the Beyond Food Foundation.
He has since appeared on TV programmes such as Dragons Den, Something for the Weekend and many News Bulletins covered by the main stream channels.
Simon’s honest yet inspirational approach to food means that Brigade cooks everything in specially designed 'live kitchens' from locally sourced, fresh ingredients.
